If you lose a leg or an arm, do you still have eight pints of blood? Surely you wouldn’t have the room!

Answer: You would lose the percentage to hold a certain amount of blood, so it makes sense that the doctor would quarterise all arteries and the heart is a self-regulating valve, so it would only produce the blood that you need.
