Herby potato cakes with bubbling goat cheese

Serves – 1

Ingredients
200g floury potatoes
2 teaspoons fresh time leaves (chopped)
1 spring onion (finely chopped including the green parts)
2 tablespoons of olive oil
1 knob of salted butter
1 x 60g (approx) firm goat cheese
Salt and pepper to taste

Preparation
Coarsely grate the potatoes and using your hands, squeeze out as much of the thick starchy liquid as possible. Place into a large bowl and combine with the time and onions. Season with salt and pepper.

Heat the oil and the butter in a frying pan and start to cook on a medium heat the 2 potatoes cakes spacing them well apart. Press firmly down with a spatula and cook for 4 minutes on each side until golden.

Once the cakes are ready, cut the cheese in half horizontally and place one half, cut side up, on each potato cakes.

Grill for 3 minutes approximately until lightly golden.

Transfer immediately on a serving plate accompanied with some rocket leaves and garnished with thyme sprigs.
