How to make onion bhajis

Have a go at Clive Bull's very own recipe for Onion Bhajis.

4oz Chick Pea Flour (Gram Flour)
2 - 3 medium onions
1 green or red Chilli - take out the seeds and chop finely
Fresh Coriander chopped up
1/4 teaspoon Chilli Powder, or some chilli flakes
1/2 teaspoon Turmeric
1/2 teaspoon Baking Powder
Salt
1/2 teaspoon Ground Cumin
Cold water
Vegetable oil for the deep frying

What to do

1) Chop up the onions, half of it thinly sliced, half finely chopped.

2) Put in a bowl and add the chilli, turmeric, cumin, gram flour, baking powder, coriander and salt.

3) Preheat the deep fat fryer to 180ºC / 350ºF or heat up some oil in a wok.

4) Add the water little by little to the mixture until it all binds together (but is not sloppy) and the onions are well coated with the batter.

5) You should be able to drop desert spoonfuls into the hot oil (carefully).

6) Drain on kitchen paper

You can also add ground coriander, ginger, tomato puree, garlic, or whatever spices you fancy.
