Kids' Salmon and Rice Salad

This is a very easy dish that you can easily cook with your young children – even a four or five year old could make it. Make sure you teach the children the dangers of the kitchen beforehand.
It’s very healthy, but has got enough flavour and colour to make kids enjoy it. And even though it’s for children, it’s one of my favourites too.
Ingredients
Poached salmon
Rice (you can cook your own or use leftovers)
Red pepper
Cucumber
Spring Onion
Dill
Chives
Dressing
Light Olive oil
Rice wine vinegar
Salt and pepper
1. Poach the salmon fillet. You can do this in the microwave, by adding water to the dish and covering with clingfilm. Cook on high for 3-5 minutes, depending on the thickness of the fillet.
2. Cook the rice (or simply heat up leftovers – but make sure it is fully heated and was refridgerated quickly after its initial cooking).
3. Chop the red pepper, cucumber, spring onion, dill and chives and mix into the rice.
4. Mix together the olive oil, rice wine vinegar and seasoning to form the Japanese-style dressing.
5. Plate up the rice mixture and add the salmon on top. Drizzle the dressing over the top.
