Otti's Amazing Potato Salad

potato saladGino asked LBC listeners to send in the recipes that have been sent down through the generations of their families. Kay in Derby sent in Otti's potato salad.

Ingredients
2-3 lb new potatoes (boiled,peeled and chopped into quarters)
3 spring onions
3 hard boiled eggs
5 pickled gherkins
pinch of salt
Black pepper
2 teaspoons of Boullion
1/2 jar mayonnaise

Preparation
Boil and quarter the new poatoes and leave to cool (peel if preferred).

Hard boil and peel the eggs and leave to cool. Finely chop the spring onions,gherkins and boiled eggs.

Put the potato, eggs, gherkins and onions into a large bowl. Spoon in half a jar of mayonnaise and mix in. Add the salt and black pepper and mix. Add 1 tsp of boullion to begin with and mix well.

Taste! Add another tsp of boullion if needed.

Refrigerate the potato salad and for for optimum taste, make it the day before you need it. It will keep for 2-3 days very nicely.
