Pumpkin Kibbeh

Ingredients
Carrot
Pumpkin
Bulgar wheat
Vegetable stock
Cinnamon
Orange (juice and zest)
Saltanas
Oil

1) Cook off carrots and half of the pumpkin, drain them and then mash them with bulgar wheat, adding stock until you get a doughy consistency.

2) Taking the mixture, create oval balls, similar to rugby ball shapes, and then using a finger make a hole in the middle to make it hollow.

3) Cook the rest of the pumpkin and mix it with cinnamon, fresh orange juice, orange zest and saltanas.

4) Then fill the hole you created with the pumpkin mixture, close the hole and then deep fry the oval balls. Serve with a tahini sauce (tahini, garlic, lemon juice).
