Simple Neopolitan Pizza Dough
by Giancarlo Caldesi
1kg flour (Double Zero)
640ml warm water
1/2 tsp yeast
1) Heat the water so that it is warm - not hot and not cold.
2) Dissolve the yeast in the water and then slowly add to the flour, constantly kneading to remove any air pockets that are inside.
3) Leave the dough in your fridge overnight as it will be slow-rising.
4) The next day make a dough ball of 200g. Leave it for 30 minutes.
5) Then use a rolling pin to flatten it out and make the pizza. If you don't want to use all the dough, you can bake some of it as bread.
