Summer Cocktails

Dacquiri
Ideal summer cocktail
60ml rum
Two tsp caster sugar
20ml fresh lime juice (or 25ml if using dark rum)
Plenty of ice
Brandy Alexander
Perfect for after-dinner
40ml cognac
20ml single cream
50ml white cacao
Shake in a shaker full of ice. Strain into a cocktail glass and shave some nutmeg on top.
Apple-tini
Big in Sex And The City and Scrubs
40ml good-quality vodka
20ml Apple eau de vie (apple brandy. Calvados would also work with a little sweetener)
A touch of sugar syrup
20ml apple juice, ideally cloudy
