The best Lobster Bisque

It's not an easy dish to make, but the results are certainly worth it.
Ingredients
Lobster
Vegetables (your choice)
Tomato puree
Fish stock
Brandy
You can make a bisque with any shellfish. This one is lobster, but you can also use prawns or crabs. A lot goes into this, but it is worth it.
1) Crush all the lobster shells down into small pieces and roast them in the oven with vegetables and tomato puree.
2) Add fish stock, then flambee it with brandy.
3) The key step - cook it for as long as possible to get it as soft as possible.
4) Then blitz it in a blender and sieve it. Serve with cream and chives.
