The Perfect - but simple - Tomato Sauce

Ingredients
2 tins Plum Tomatoes (I use Cherry Tomatoes from Napolina)
1 large onion
3 cloves garlic
70ml-100ml Olive oil
Salt
Pepper
1) For the perfect tomato sauce, the onion base is vital. Chop the onion finely and fry the onion with the crushed garlic over a high heat until it is dark blond and you can smell the sweetness coming out of the onion. It takes longer than many people give it.
2) Squash the tinned plum tomatoes and add them along with the olive oil once the onion is ready. My tomato sauce cooks for a minimum of one hour without a lid. It will condense down as the water evaporates and you'll get a perfect tomato sauce.
I never EVER use sugar.
