The Perfect Fish Dinner
CJ Jackson, Billingsgate Seafood Training School told Tom Parker Bowles the perfect way to cook fish.
Fish is the ultimate fast food and there are some very simple methods of cooking fish that are very quick, healthy and delicious. The recipe below uses cod, but you could use any other white fish fillet, such as haddock.
Ingredients
Cod fillet (skin off)
Breadcrumbs
Fresh parsley, chopped
Butter
Mustard
Olive oil
1) Pre-heat oven to 200 degrees C.
2) Mix the breadcrumbs, parsley, melted butter and mustard in a bowl. Brush the fillet in olive oil and dip into the mixture to coat the fish.
3) Put it in the oven and bake for 12-15 minutes.
Cooking fish with the skin-on
If you have a fillet with the skin on and you don’t want to go to the hassle of removing it, try this:
1) Put the fillet into a hot pan with the skin-side up.
2) Add a little olive oil and seasoning.
3) Put it under the grill or in a hot oven and roast until the skin comes loose and the flesh has lost its translucency.
