The Perfect Pancake Recipe
The basic batter is quite simple but getting it right is a skill. After trying many pancakes in the studio, this recipe is by far the most successful. This will make between 12-14 English style pancakes.

110g/4oz plain flour, sifted |
Large mixing bowl |
How is it done?
1. Sift the flour and salt into the mixing bowl from a good high to it get the air to it.
2. Using your finger, make a well in the middle of the flour and break the eggs into it.
3. Using the whisk or fork beat the eggs into the flour picking up any flour stuck around the edges of the bowl.
4. Slowly add the water/ milk mixture to the bowl and beat into a smooth batter.
Tip: after the batter is smooth let it stand for about 5 minutes, we find it cooks better by doing this.
5. Heat up the pan under a high heat and add the butter to it.
6. Once the butter has melted pour it into the batter and whisk again.
7. Insure the pan is well greased and then add enough batter to cover the bottom of the pan - it's less than you think you'll need.
Tip: use the ladle so you can add this all at once and create an even pancake.
8. Each pancake will take a few seconds to cook and once it lies loosely in the pan flip it onto its uncooked side. You can use the spatula here if you're having difficulty.
9. Let the pancake cook on the other side until it moves loosely in the pan.
10. Slide the pancake out onto a plate and eat!
Now we have the pancake sorted what for the toppings? There is the classic of lemon juice and icing sugar but here are a few more to give you inspiration.
Grated cheese and ketchup - A winner with kids as it's like a pizza pancake.
Feta cheese with preserved figs and rocket.
Shredded chicken breast cooked in paprika, garlic and mild chilli powder with olives and crème fraiche.
Minced beef cooked with onions, garlic and chilli kidney beans served with sour cream.
Chocolate spread, bananas and cream.
Natural yogurt with Canadian Maple syrup.
