Tom's Easy Fried Rice
Turn your leftover ingredients into this easy, delicious supper.Prep time: 10 min | Cook time: 1 hr | Serves:4
Ingredients
2 eggs
1 tbsp vegetable or sunflower oil
2 large handfuls leftover vegetables, such as cooked broccoli or greens or uncooked tomatoes or spring onions
1 handful frozen peas
100g ham, diced
300g cooked rice
1 tbsp chilli oil
Store cupboard seasoning, according to taste, such as sesame oil, soy sauce, chilli flakes
Method
1. Lightly beat the eggs with salt and black pepper.
2. Heat the oil in a wok or large frying pan over a high heat then add the leftover vegetables, peas and ham and fry for 2-3 minutes until crisp and golden-brown in places and heated through.
3. Stir in the rice and cook for 2-3 minutes until steaming hot then make a well in the middle and pour in the eggs. Gently stir the eggs into the other ingredients and cook for 1-2 minutes until the eggs are just cooked.
