Why are anchovies so salty? No other fish tastes salty like that? Even fresh anchovies taste very salty.

Answer: If you go to your local deli, you can buy anchovies marinated in herbs, oil and garlic and they don’t taste the least bit salty. They are beautiful with a little ciabatta bread. The reason most anchovies taste salty is that they have been preserved in salt!
